Applesauce & Banana Protein Muffins

There must be a huge increase in calories consumed on rainy days. It rained for 48 hours straight and I just wanted to eat and watch movies. Since, I can’t watch the movies I’d want to watch on account of the kids and in the absence of popcorn, chips, cookies, crackers, cakes, nachos and cheesesteaks, I was desperate for some comfort foods.  So with the kids assistance we made muffins two ways.

I made mini muffins sans protein powder for the kids.  Then one with for the adults.  We just doubling the recipe below. Both had mainly the same ingredients, except I also switched out the Splenda for brown.  I didn’t use wheat flour this time around but will likely try a combo next time.

They are particularly good warmed with a bit of peanut butter.

Dry Ingredients
11/2 cups of flour
3    packets of splenda
1/2  tsp of salt
2    tsp baking powder
1    tsp cinnamon
4   scoops of Vanilla protein powder (we use Optimum Nutrition Natural Whey)

Wet Ingredients
2   egg whites
2   bananas mashed
1/3 cup milk  (we used whole milk)
1 cup applesauce (unsweetened)

Directions

1.  Preheat Oven to 400 degrees

2.  Grease Muffin tins with nonstick spray.

3. Mix wet and dry ingredients separately before combining.   Spoon into muffin trays.

4. Bake for 15-20 minutes.  Check with toothpick.
