Adult Protein Pancakes vs Kids Pancakes

So, it’s pancake day.  We love pancake day.  The kids are involved with the mixing process and love to get the flour everywhere.  On pancake day I normally make two types of pancakes healthy wheat flour cakes for the kids and protein pancakes our Karen and myself.

Protein Pancakes vs Kids PancakesToday the extra challenge was the absence of eggs.  When you eat a dozen to a dozen and a half a day they tend to not last long.   I subbed in bananas and made them pretty much as follows   It really only took a couple minutes to make a whole different pancake so we each got what we need.

PROTEIN PANCAKES

1/2 banana
1 cup of Old Fashioned Oats blended to a fine powder
2 scoops of Myoplex Vanilla Protein Powder  (Not our favorite. I would love some recommendations for a good baking protein powder)
1/2 tsp Vanilla
1 tsp of banking powder
1 cup of Almond Milk.  There may have been a second cup.  I can’t remember with the little guys assisting.
1/2 tsp Cinnamon

Heat non stick pan to Medium.  I topped with a no sugar syrup and Karen spread some PB on there.  Pretty good.  Made four big pancakes and the protein count was probably pretty good.  Carbs we don’t care about right now.

KIDS PANCAKES
1 cup of wheat flour
1/2 cup of white flour
1/2 tsp white sugar
1 banana
1/2 tsp of Vanilla
1/2 tsp of Cinnamon
1 cup of Whole Milk
some water to get the consistency I was looking for

Used a griddle heated to 350  Topped with PB and J and folded in half so it’s kinda like a taco.
